I once ate at a pure vegetarian Chinese restaurant in Kuala Lumpur that had simulated fish dishes that were so realistic that it even seemed that the "fish" had scales. It smelled and tasted like fish, too. My Chinese Malaysian friend who took me there said that most of the customers were Buddhists who were not necessarily vegetarians, but chose to eat vegetarian dishes on certain days that were sacred to Buddhists. Therefore, they preferred dishes that tasted like the foods they were used to eating.
